Football season is sanctuary to many people, but some people love it for another reason…the snacks! That's right… while your team guns for a win, some of us are gunning for a winning dip. Whether you’re aiming for a healthier option this year or you're all about cheese and extra hot sauce, there are a few dip recipes that will knock your socks off. After all, there's nothing like a great party dip to liven up the mood in the event your team isn’t playing well. Here are a few favorites for this season:
Spicy & Sweet Black Bean Dip
- 15 1/4 ounces black beans
- 1 clove garlic
- 2 tablespoons Greek yogurt
- 1/4 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- 1/8 teaspoon cayenne pepper
- 1 cup chopped pineapple
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled queso fresco
- Hot sauce
In food processor, pulse black beans, garlic, Greek yogurt, chili powder, ground cumin, salt and cayenne pepper until smooth. Transfer to serving dish.
Top with pineapple, cilantro, queso fresco and hot sauce, if desired. Serve with chips for dipping!
Hot Crab Dip with Scallions and Jalapenos
- 1 tablespoon olive oil
- 4 scallions, thinly sliced
- 2 minced jalapenos
- 2 minced cloves of garlic
- 1/2 teaspoon smoked paprika
- 1 pound lump crabmeat
- 1/3 cup mayonnaise
- 1/3 cup crème fraiche or sour cream
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- Dash of cayenne
- Crushed tortilla chips
In a medium, non-stick skillet, heat olive oil. Sauté scallions, jalapenos, garlic and smoked paprika over medium heat until soft, for 2 minutes. Remove to a mixing bowl.
Add crabmeat, mayonnaise, crème fraiche or sour cream, lemon juice, salt and cayenne to the vegetable mixture. Try not to break apart the crab too much as you mix everything together. Transfer the crab dip to a medium (8x8 or comparable) casserole dish.
Preheat the broiler. Sprinkle the crushed tortilla chips over the top of the dip. Bake under the broiler until golden brown on top and heated through, for 2 minutes. Serve immediately with tortilla chips on the side for dipping!
Here are some quicker dipping options:
- 2 tomatoes
- 1 jalapeno
- 1 scallion
- 1 garlic clove
- 1 tablespoon fresh mint
Broil tomatoes until charred, then cool and core. Pulse in a food processor with minced jalapeno, scallion, garlic and mint. Season with salt.
- 8 hard-boiled eggs
- 1/4 cup mayonnaise
- 1 tablespoon mustard
- 1 chopped pickle
- Dash of hot sauce
- Paprika, salt and pepper to taste
Puree hard-boiled eggs with mayonnaise, mustard, pickle, a dash of hot sauce, and paprika, salt and pepper to taste. Garnish with chives.
- 1/2 pound grated cheddar
- 1/2 pound grated pepper jack
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons diced pimientos
- Hot sauce
- Onion powder
- Garlic powder
Mix both the cheddar and pepper jack, mayonnaise, sour cream, and 2 tablespoons diced pimientos. Season with hot sauce and onion and garlic powders.
